A historic vineyard now abandoned by its 13 owners who have become very elderly. They gave us their rows allowing us to give new life to this wonderful vineyard.
Soil: Characterized by clayey morainic deposits with a marked presence of iron
Plant: Year 2000
Altitude: 250 meters
Cultivation: Guyot with Simonit and Sinch pruning
Grape yield per hectare: 60 quintals
We do not use herbicides. Processing of the under-row, trimming and treatments carried out with mechanical means. All other operations, defoliation, thinning, trellising, are carried out manually including the harvest.
Harvest: Manual, in 20 kg boxes
Maceration duration: 21 days
Tanks: Stainless steel at controlled temperature
Aging: French Oak Tonneau
Malolactic Fermentation: Turned in wood
Aging duration: 18 months
Manual harvest in 20 kg crates. After crushing and destemming, the must is sent to the tank for fermentation and maceration which lasts about 21 days in stainless steel tanks at a controlled temperature. Once this phase is completed, the wine is filtered and placed in French oak tonneaux for aging. After about 18 months in tonneaux, the wine is ready for bottling.
It is recommended to serve San Quirico at a temperature of 18°C. Open one hour before tasting it goes well with game-based dishes, roasts, stews, blue and mature cheeses. Also excellent after dinner, for meditation. Suitable for aging over 20 years from the harvest.
