High quality salami, made with selected Italian heavy swine meats, spiced with white pepper and blue cheese. The grinding grain is coarse (7mm), it is stuffed into exclusively natural and small-sized casings. As tradition dictates, it is tied exclusively by hand, and patiently matured for 30 days or more. The widespread presence of white-green colored molds completes its artisanal identity. The flavor is strongly bound to the aroma of the cheese which is combined perfectly with the delicate spiciness.
It is a Salame that was born as an evolution of the salami-cheese combination, born from our first digression "norcina" with the patent of Salame Goccia with Branzi cheese. It stands out for the sweetness of the salami mixture, seasoned with only white pepper, and the pleasant strong note of the blue cheese.

The grinding of our selected Italian pork is the first step for the production of or Salame al Formaggio Erborinato. The processing of the meat leads to thick meat grains, about 7mm, which are then mixed with only white pepper and blue cheese.

Binding: Exclusively by hand
We carry out the binding of the Salami exclusively by hand as required by the butchery tradition of the Bergamo valleys. A label is affixed to each piece with all the indications of production and ingredients. The size is small, around 600 grams.
For a correct tasting, the product must be removed from the refrigerator well in advance to enhance its aroma and perfume. It is excellent as an appetizer, as an accompaniment to aperitifs for its appetizing flavor.
