Our artisanal mortadellas are a family pride. They are the result of a long knowledge and of the recipe developed by Silvio Scapin, our Maestro Artigiano, which respects the rules of proper nutrition. It is based on a short supply chain, raw materials of the highest quality, certified organic meats, entirely artisanal processing and slow cooking. All our products are allergen-free and suitable for everyone, young and old. Our mission remains unchanged over time: excellence is only artisanal.
Cooking time: 24-28 hours
The mortadellas are hung in trolleys and taken to the stove. Cooking takes place at a low temperature for a period of time ranging from 24 to 28 hours. We have chosen this type of cooking as it is the best method to highlight the natural ingredients used. These peculiarities, together with the exclusively artisanal processing method, characterize our production. The resulting taste and flavor are characterized by the delicacy of a unique flavor, which fully respects the tradition of this wonderful product.
