This wine comes from a historic vineyard, abandoned by its 13 owners who have become very old. They gave us their rows, allowing us to revive this wonderful vineyard.

STEP 1

Vineyard

Soil: Characterized by moraine deposits with a clayey character and a marked presence of iron

Planting: Year 2000

Altitude: 250 meters

Training system: Guyot with Simonit and Sinch pruning

Grape yield per hectare: 60 quintals

We do not use herbicides. Processing of the under-row, topping and treatments carried out with mechanical means. All other operations, defoliation, thinning, palizzatura, are performed manually including the harvest.

STEP 2

Vinification

Harvest: Manual, in 20 kg crates

Maceration duration: 21 days

Tanks: Stainless steel at controlled temperature

Aging: French oak tonneau

Malolactic Fermentation: Carried out in wood

Aging Duration: 18 Months

Manual harvest in 20 kg crates. After crushing and destemming, the must is sent to the tank for fermentation and maceration which lasts about 21 days in stainless steel tanks at a controlled temperature. At the end of this phase the wine is filtered and placed in French oak tonneau for aging. After about 18 months in tonneau the wine is ready for bottling.

Bottling

Cap: Natural cork

San Quirico is bottled in the autumn of the second year after the harvest. From here begins a long phase of refinement in the bottle. In the 2011 harvest, 4,300 bottles were produced.

Tips for Tasting

We recommend serving San Quirico at a temperature of 18 ° C. Open an hour before tasting it goes well with game-based dishes, roasts, stews, blue and aged cheeses. Also excellent after dinner, for meditation. Suitable for aging over 20 years after harvest.
