Starting from the 2012 vintage our Ghemme DOCG is called "Victor" in memory of Vittorio, my dear father with whom I shared the dream of producing wine in Alto Piemonte.

The Supply Chain

STEP 1

Vineyard

Soil: Of alluvial origin, sandy / clayey base with basalt and porphyry rocks.

Planting: Year 2000

Altitude: 300 meters

Training system: Guyot with Simonit and Sinch pruning

Grape yield per hectare: 60 quintals

We do not use herbicides. Processing of the sub-row, topping and treatments carried out with mechanical means All the other operations, defoliation, thinning, palizzatura, are carried out manually including the harvest.

STEP 2

Vinification

Harvest: Manual, in 20 kg crates

Maceration: 21 days

Tanks: Stainless steel at controlled temperature

Aging: Large French oak barrels

Malolactic fermentation: Carried out in wood

Duration Aging: 24 months

Manual harvest in 20 kg crates. After crushing and destemming, the must is sent to the tank for fermentation and maceration which lasts about 21 days in stainless steel tanks at a controlled temperature. At the end of this phase the wine is filtered and placed in large French oak barrels for aging. After about 24 months in cask, the wine is ready for bottling.

Bottling

Cap: Natural cork

The Ghemme is bottled in the spring of the third year after the harvest. From here begins a long phase of refinement in the bottle. In any case not less than two years as to be regulated. In the 2012 harvest, 3,800 bottles were produced.

Tips for Tasting

We recommend serving Ghemme at a temperature of 18 ° C. it goes well with red meat dishes, roasts, stews, blue and aged cheeses. Also excellent after dinner, for meditation. Suitable for aging over 20 years after harvest.
