Nebbiolo is a red grape variety. The pink color of this wine comes from the fact that the must remains in contact with the skins for only a couple of hours.

STEP 1

Vineyard

Soil: Characterized by alluvial deposits with basalt and porphyry type rocks

Plant: Year 2000

Altitude: 300 meters

Cultivation: Guyot with Simonit and Sinch pruning

Yield per hectare: 80 quintals

We do not use herbicides. Processing of the under-row, trimming and mechanical treatments. All other operations, defoliation, thinning, trellising, are performed manually including the harvest.

STEP 2

Winemaking

Harvest: Manual, in 20 kg boxes

Fermentation duration: 21 days

Tanks: Stainless steel at controlled temperature

Manual harvest in 20 kg crates. After crushing and destemming, the grapes are pressed and the must is sent to the tank for fermentation, which lasts about 21 days in stainless steel tanks at a controlled temperature. Aurora does not carry out malolactic fermentation.

Bottling

Stopper: In microgranulated cork Diam.

Aurora is bottled in the spring following the harvest.

Tasting Tips

It is recommended to serve Aurora at a temperature of 10°C. Perfect as an aperitif, it pairs well with fish dishes, especially raw fish, fresh cheeses and even dry pastries.
